Snowflakes Room
was established in 1900. The founder, the family
financial situation of Lushui was very bad, he
had to wholesale the pastry and then peddle goods
in the streets by chanting when he was little.
At his age of 13, he got acquainted with Chenzu,
a master cook at Shantou Food in Canton for about
two years. After that he continually studied snacks
and craftsmanship diligently with a quiet mind,
and founded the first pastry store when he was
twenty. He named this store ¡¨Snowflakes Room¡¨ from
the first word of the poetry singing by six scholars.
The poetry is : The fragrance of the Cassia flower
is all over the world in Mid-Autumn, and the snow
reflects the plum tree in front of the village
in winter.¡¨
At that time, people scorched both sides of crust
to do gram pastry. Lushui fried the single side
only and adjusted the way of producing crust, he
made the crust snow-white and leavening. When people
peeled it, the crust will fall down one piece after
another, just like the snowflakes. Lushui named
this pastry as ¡§Snowflakes Cake¡¨. The inner stuffing
was made with gram kernels. Later Lushui settled
and filtered ªá¨§ again and again to produce a refreshing
taste of ªá¨§¨F moon cake. He took the contest with
these two cakes in the 1925 and got an award of
bronze medal. From then on, he has been so famous
and reputable in the years that most awards were
attained by Japanese.
Lushui had six sons. Four of the six has inherited
his pastry technique. In 1959, Lushui still assumed
personal command at Old Snowflakes Room till he died
after he divided up family property to his sons.
His sons established individually ¡§Old Snowflakes
Room¡¨, ¡§Snowflakes Room¡¨ and ¡§Chrysanthemum Room¡¨
for producing and selling pastry. Though each of
them has their own baking factory, the pastry technique
could be traced to the same origin of Lushui. The
taste and the sort of pastry are similar, too. |
